Caol Ila Single Malt Scotch Whisky

2012

This Single Malt Scotch Whisky was distilled and filled into a refill Sherry butt at Caol Ila Distillery on Islay in 2012 and bottled at 57.9% after spending a period of secondary maturation in a French oak cask which previously held Pineau Des Charentes fortified wine. We nurtured this very special whisky through the ageing process, checking the quality of the liquid on a regular basis and bottling at just the right point. Not too much, not too little character from the wood.

The wine has seasoned the oak to deliver a ‘finish’ of smouldering beach bonfire embers, cigar box, gingerbread, cracked black pepper, orange peel, stewed fruits and dark toffee.

Only 659 bottles produced from one single cask no. 12038.

The Distillate
Distillery: Caol Ila
Region: Islay
Style: Sea shore – salty breezes, lobster nets, sun-warmed shells with a gentle ashy smoke and some ripe pear

Primary Maturation
Refill Sherry Butt
Cask influence is not dominant and the gentle subtly smoky style of the distillate is prevalent throughout. Larger vessel lessens spirit to oak contact and provides higher bottle out-turn.

Secondary Ageing / Finish
Pineau des Charentes Region: Western France (Cognac)
Type: Fortified wine
Style: Cooked fruits, cinnamon and clove, orange peel, nutty
