Appearance: Pale gold.
Nose: Honeydew melon, acacia bloom, beeswax, dried grass, peppery oak.
Palate: Warm apple pie, fresh vanilla pod, ripe peach, orange blossom water, violets, heather honey, yellow sultanas.
Finish: Warm peppery oak, almond oil, canned fruit salad.

Glen Spey Single Malt Scotch Whisky

Aged 14 Years

This Single Malt Scotch Whisky was distilled and filled into a refill Hogshead at glen spey distillery in Speyside in 2009 and bottled at 54.7% after spending a period of secondary maturation in a French oak cask which previously held loupiac sweet wine. We nurtured this very special whisky through the ageing process, checking the quality of the liquid on a regular basis and bottling at just the right point. Not too much, not too little character from the wood.

The sweet wine has seasoned the oak to deliver a delicate ‘finish’ of honeydew melon, apple pie, acacia blossom, almond oil, beeswax and peppery toasted oak.

Only 315 bottles produced from one cask no. 12031.

The Distillate
Distillery: Glen Spey
Region: Speyside
Style: A purifier pipe helps keep the distillate light in character with the heavier compounds falling back into the pot still. A pleasant almond oiliness on the mouthfeel with hints of ripe apples.

Primary Maturation
American Oak ex-Bourbon Hogshead
A gentle cask for the majority of the maturation period to give the distillate character the predominant voice. Those grassy, nutty, appley notes from the new-make prevail throughout.
